l'association a pour objet au niveau régional, national et international : de promouvoir par tous les moyens, la gastronomie, les produits régionaux et l'art culinaire, valoriser et défendre tous les métiers de la bouche, mettre en valeur la compétence professionnelle, encourager et aider la formation professionnelle des jeunes, organiser des concours des salons et des expositions, créer des sections dans les pays étrangers, réaliser diverses activités (concours, manifestations, salons des métiers de bouche, expositions professionnelles, éditions...) déposer des recettes et autres documents au conservatoire National de cuisine aux archives départementales de Draguignan, créer un musée de la gastronomie, fonder des délégations régionales, nationales et internationales, promouvoir des échanges culturels culinaires, l'association n'emploie pas de personnel salarié
